Got a party tomorrow night, they love ribs, I need practice on the WSM.. Got some spare ribs and trimmed them down, lots easier than I thought, lots of fat I removed... I know, cut the fat, cut the taste.
Well just getting around to posting updates. I had a good smoke. I made a little boo boo. I forgot to put the charcoal ring in. It did affect the temp a little.
Rib tips I marinated for a few hrs.

Cut up all the tips and going to add to my pork n beans in a few weeks at a rib contest.
Nothing wrong with that cook.....actually, cutting the fat off of the outside doesn't hurt the taste, IMHO anyway, what's on the inside gives it the taste...........................d
