My wife agreed to let me grill the turkey this year. However, the turkey she bought months ago was a 22lber. I had to spatchcock and then quarter the beast to make it fit on grill. I injected with butter with my new toy
Then wet rubbed with Simon and Garfunkle rub...Parsely, Rosemary, Sage, and Thyme. Also Black Pepper and garlic Powder. Olive Oil to make it wet. And chilled in fridge for awhile.
Snake Method with a lot more lit coals than usual. Had to get temp up to about 300*-325*. Got it there and used a chunk of apple for smoke. Let this thing cruise for about 3.5-4 hours, and coulda pulled it earlier. Next time I'll get it to 325 for 2 hours for crispy skin and then let it slow cook for another 2 at 250-275.
Great results though! Delicious, juicy, smokey and crispy skin. Sorry. No plated pics....no time when 10 people are waiting Happy Thanksgiving!
