2-20lb Briskets on the 22

Nothing Fancy. Injected w/Beef Broth & Worcestershire Sauce. Made up a Texas Trinity Rub (SP&G)
Cooked @275 with Hickory for 11 hrs
Halfway thru flipped Briskets from Bottom Rack to Top. Had to cook to internal temp
of 210 to get the Probe to feel like it was going into Soft Buttah

Kemper doing two 20 lbers at what temps do you like to cook these at? 40 lbs of meat will take how many hours at that temp.
I remeber you talking before about hot and fast I just can not remember how hot??
