1st Pork Butt (High Heat)

Woke up early this morning to try my first low and slow pork butt, but the temperatures spiked and resulted in high-heat pulled pork. This was also my first time using a clay saucer instead of water.

The dome temperature got up to around 330*F after about 1.5 hours and held there the rest of the cook.

I did a couple things differently than I normally do, which may explain the rise in temperature:
1) First time using a 14" clay saucer instead of water.
2) Started off with 40 lit K's, compared to my usual 15-20.

It took about 3hrs 40mins to reach 176*F (I was running errands before then), and that's when I placed the butt in a pan with apple juice and foiled...then it took about an hour to reach 190*F.

After storing it in a catering bag for an hour and a half, the temperature dropped to 175*F. I panicked and put the whole tray back on the smoker with all the vents off.

When it reached 199*F an hour later, I placed it back in the catering bag for another 1.5 hours until dinner time.
 
Thanks for the info. I'm doing a large batch for a party, and may bump the temps as I don't have as much time as I'd like.
