1st cook on the way, smells like a greek festival


 
Ok the pork loin, came out looking good but maybe too much hickory flavour! (I did not soak the hickory chunks and I picked 2 chunks the size off beer cans, so maybe too much smoke???? tasted like a double smoked Christmas leg ham!) and the pork rind I over cooked by miles, but my fault! (was only going to cook that for 1 hour, but that blew out to 6 hours, as I got stuck at the pub watchin 2 games of footy and drinkin beer)


wife cooked up some garlic potatoe bake and veggies & a pepper sauce, as I forgot to make the apple mop! over all not bad!
next time will have a few more questions to ask b4 lighting up!

It looks great. Like Tim says, if hickory is a bit much for your taste, I'd recommend a lighter smoke wood. Maybe apple or peach. I am a less is more kinda guy when it comes to smoke wood also. When I first started I thought it was suppose to smoke the whole time which resulted in the "astray effect". Now I realize one small piece of strong wood (like Hickory) or maybe a couple pieces of lighter wood (like apple) is enough for the whole cook. All in all, I'd say your first cook is a success because you are beginning to learn what you like from it.
