So I’ve had this thing sitting in the garage for a couple months now from getting it off of craigslist and finally had the chance to fire it up. I’m used to smoking on my Kettle’s so, I read very little on set up and just said “to hell with it - let‘s go!”. Started with a full chimney of Kingsford Blue, some hickory chunks, the water bowl about half full (not wrapped) and didn’t quite get her hot enough for the start as when I put the rack of ribs on it was stuck at 210. I’ll be dang’d how well the temp held for the first three hours at 210, but then I started to lose temp rapidly even with all the vents wide open. So I threw in 2 more scoops of unlit coals, a fire starter and some extra small chunks of hickory. I also used a small stick to keep the lid ajar while the new coals smoked off and the heat rose. Pretty soon I was up to 250 and was good to go till I pulled them off about another 2 1/2 to 3 hrs later. The last half hour I sauced with a local sauce and I had sprayed maybe two times with a apple cider vinegar / apple juice mix. Overall the smoke ring was great, I didn’t have to babysit this like I’d have to on the kettle and the ribs were mostly great. I’m always a critic on my food and felt I had put a little too much seasoning on the ribs before they went on. Pictures below:
