If you had this guy hanging out in your fridge... Which method would you choose to smoke it? It's rubbed with equal parts black pepper and salt with a bit if garlic powder and a dash of cayenne pepper then vacuum sealed with my foodsaver!
 
Looking good so far, Michael. I prefer the HH method myself. Guess you gotta make the call.
