100th post Chuck Roast

Well, I b.s. a lot on here about others guys/gals impressive cooks and such. So I thought it proper, to try to do an impressive spread for my 100th post.

Day off today, hangin solo with my 3 month old.
He doesn't always look like this, but it's been a lil struggle between him and tonight's dinner (if you've spent any time watching lil one by your self, you understand).

Started with a 3+lb boneless chuck at @10:40 this morning. Did "Stogies" and a lil rub of my own with beef broth.

About 1pm refilled water pan and covered with 2nd foil pan (ran out of aluminum foil). Pic with my overgrown bush.

Potato, onion, carrots to come soon and hopefully yummy dinner.

Desert: baked apples with candy filling.

Uh oh, there he goes again, hopefully post more pics soon :}
 
Thanks Wayne. Looking forward to seeing what it looks like out the smoker. You did it in the braise the entire cook? I haven't tried it that way. I've tried twice now and both times smoked to 165, then once straight foil, once the Larry style in the pan with the beer, onions, peppers, etc.

I have a 8 month old so I can relate to the kid cooking issues.

Here's how were lookin at 4pm. Hopefully be done by 6, haven't checked meat temp yet, but looks good.

@ Tim, yea braise whole cook. Started a lil hot at 290 but was able to get it down to 250ish most of the cook so far.

Mine is not crawling or walking yet, I could only imagine how that's going to go

Was done by 7:30, instead of 6, but well worth it! It was meaty beefy goodness. A little too beefy for my wife, she doesn't eat meat much. Funny, she loved my meatloaf I did a couple weeks ago in the WSM? So I ate half of her plate too

Saved the rest in the freezer to make some pulled beef bbq sandwiches to bring to work next week.
