Recipes for Chum salmon?

Posting this request on behalf of someone that sent me this email:

"Have any great recipes for smoking Chum salmon? I found a bland brine recipe but want some killer recipes for my 22" Weber Bullet. Also, any thoughts about substitute alder with cherry or apple chunks?"
 
Any chum I catch are made into Salmon Candy.
I use my electric smoker as the recipe requires a temperature of about 120 - 140° to smoke/cook.
I haven't had much luck on my WSM holding that low temp.

As far as the wood to use, I have mixed all three( alder,cherry,apple ) at the same time while smoking.
Peach can be used too, harder to find in my area.

OT: try a snake method to maintain that low of temp - I've done it 2-3 times for jerky on my wsm.
