Heavier Baby Back/Loin Back Ribs - 3.25# to 3.5#


 
After foiling, I remove my rib racks (I normally do three half racks on each grate), then stack the foiled ribs (three on each grate) for an hour then check for tenderness. If not tender enough, check at ten minute intervals until tender to your preference before removing.

NOTE: When foiling I put the ribs from the top grate on the bottom and vice versa just to even up the heat a bit between each grate.
