Parchment paper smoking


 
Just curious, does anyone use parchment paper while smoking to make clean up easier. I see some people use red butcher paper but I have never heard of using parchment paper. any drawbacks that you know of ?

I've used it to wrap a brisket. It performs about like tin foil. To my knowledge, it isn't available in 18" wide rolls.
That's a bit of a problem when doing a brisket.

I prefer butcher paper.
 
The reason parchment paper is more like foil is because of the way the surface is processed (and sometimes coated with silicone for non-stick properties) makes it more water- and grease-resistant than butcher paper. Parchment paper doesn't "breath" the same way that butcher paper does...maybe more than foil, but less than butcher paper.
 
I use it under Meatloaves all the time and have tried it under butts and it does help in cleanup.
