I just put this rub on a butt yesterday, YUMMY.
SAUCE: No.5 (with T of mustard, and almost TWICE as much rub indicated) VERY GOOD, although hint of grit from the coffee. Maybe shot of espresso would be better.

Bryon, I have been getting mine from Costco. They seem pretty consistent. But I use a rib rack because I have the 18.5 as well. I have also rolled the ribs - both ways work well. I forget what the weight range is, I usually go for $22 range. BUT I LOOK at them ALL. Good luck.
Sounds good. I have been playin around with different ways lately. I like to add the salt separately too, but I have been putting it on first so the rub (saltless) sticks to the moisture...
PeterD, I use the Trader Joe charcoal, you may have one close??? I have use both the Blue K and Comp K, but like this MUCH better. However, I am still pretty new at this and don't have tons of experience with other brands. Hope this helps.
I smoke mine lightly by making a foil boat making use of the heat left over from a cook. Once they have some of the smokey flavor I will let them sit out to dry or stick them in the oven for a spell. I like to grind them and use them the same as chipotle powder but with a better "kick."
Thank you Wolgast. Of course I had to fire it up just to see how she would run. The guy before me took real good care of her. AND while I was being amazed by the steady temps, I threw 5 serranos on. Love smoked chile.
