    minion method???

I've been using the Minion method before it was known as the Minion method. My father in the early 60s used this method on his "Portable Kitchen" grill which I later modified to prolong the cooking time. When I joined this forum I was rather surprised to find out it was something "new" and had a...

Two big pork steaks, cast iron frypan, and a day or two to plan

Don't worry about the cast iron. Just keep cooking with it. I have both vintage Griswold and newer Lodge. Just avoid acidic items until you get a good seasoning layer. Just keep using it and the pans will continue to season.

    Storing cast Iron skillets

Crisco is hydrogenated vegetable oil. The ingredients are Soybean Oil, Fully Hydrogenated Palm Oil, Partially Hydrogenated Palm and Soybean Oils, Mono And Diglycerides, Tbhq and Citric Acid (Antioxidants). I have a lot of cast iron pieces and have never had a problem with the oil becoming...

    Roadside Chicken

In reviewing the recipe it looked familiar to me for some reason. I then realized many people have used Wish-Bone Italian Dressing as a marinade and basting sauce for chicken for as long as I can remember. Here are the listed http://www.wish-bone.com/WB_Products_Info.pdf ingredients for Wish...

    Better understanding of charcoal cooking

There are as many ways to cook most things as there are cooks and everyone has their favorite way or method. This isn't rocket science, do some reading on the forum and develop your own way of cooking and have fun doing so.

    Seasoning New Cast Iron

Jim I would suggest you season and cook at the same time. A great way is to make oven fries. Place your skillet in your oven and set your oven to 450 to 475 degrees F. While the oven and skillet are coming up to temperature slice up some potatoes into fries, place them in a bowl and toss them...

Burnt crud in Cast Iron Skillet *****

Try placing a generous amount of salt in the pan prior to using it. The salt will absorb much of the grease thus reducing the amount of crud accumulating in the pan.

Calphalon hard-anodized aluminum is no more non-stick than stainless. Check out this discussion and poll about cookware.

    Good frying pan

I really like my All-Clad pans. I must be an aberration because I am a “pan flipper” and have no problem with the handles or balance issues. I have the 12 and 10 inch skillets, 3 qt. sauté pan, 3 qt. saucier, a couple of sauce pans and a stockpot. One is from their Masterchef line and the rest...

Cleaning Ceramic Rods on Knife Sharpener

You may also clean them with Comet, Bon Ami or a similar abrasive cleaner used with a nylon or non-metallic scouring pad. Works great on my Spyderco ceramic rods.

    Good frying pan

Hi Al, Check out this in depth discussion and you will have all the necessary information to make an informed decision. That being said, I use cast iron skillets and also clad type cookware with an interior of stainless steel or clad with an interior AND exterior of stainless depending upon...

Brunswick Stew - cast iron question

Sounds like the acidic ingredients in your stew removed the seasoning from your pot. You will need to re-season the pot.

Where to buy a roasting pan ?

I have never used Dormond, does it work appreciably better than Ajax, Comet or similar cleaners? I have to use a lot of elbow grease with Comet/Ajax to remove the film from my AA pieces. Bar Keepers Friend works great on my All-Clad without a lot of scrubbing. Jeff

Where to buy a roasting pan ?

Cook's Illustrated rated the All-Clad Stainless Steel Roti, Model #5016 as best followed by the Calphalon Anodized French Roast Pan, Model G6818 HC. If you intend to make au jus or gravy from the drippings then don't buy non-stick as it does not facilitate fond production.
