    Like Wayne, I've used the Smithfield butts. I examined the packing carefully and saw nothing about any injected solutions. They have worked well for me.

    Crikey, what have I gotten myself into...

    Spyro, I wouldn't inject the birds. They already have a lot of moisture from the broth injection. I would enhance flavor with a rub applied before smoking and sprinkled on after it is removed and is cut for serving. What is "Crikey"?

    Jim--I don't think the water pan could feel a thing, but I did hit my finger once while hammering the chisel -OUCH!!! Bruce --I think if I had re-cooked it, it would have been worse? Doug--Hadn't thought of that, might have worked, but then I didn't have that much space left in my freezer...

    Got in a hurry to get started on a 8 1/2# butt. About an hour into the process I realized that I had forgotton to put foil over my sand. "What the hell" I thought, so I'll ruin this sand I have access to plenty of it and I'll just replace it. Went through a 15 hour cook without taking the lid...
