    marinating brisket

    Thanks Adrian,i forgot to mention in the above thread that he marinates his briskets in buttermilk,i guess that is what i was most suprised about,i assumed that a brisket marinade was quite common,just not a buttermilk marinade. thanks again!

    Does anyone marinate thier brisket overnight befor they smoke? a local bbq guru Ron Lutz, has a bbq book out and in the brisket chapter,he says to soak the brisket 12-24 hrs befor he rubs then puts on the pit. anyone seen this done befor? or have any marinade tips.

    Ribs turned out great

    Thanks to everybody for the help. made my best ribs yet. I used Tom Barineau's method for the coals, put one layer of k-ford on the bottom and made a bowl shape with the rest, put lit coals in the center, worked great! rolled some ribs and used racks for the others both ways turned out really...

    ROLLED RIBS!

    Tom, do you stack the coals in an orderly fashion ? like one on top the other, or just throw them in? and make your bowl shape. this sounds like a good way to make MM even more fuel friendly. i think i'll try it this weekend.

    Thanks for the help,i think i will roll them ,my brother and 4 friends are coming over sunday for the daytona 500,so i will be smoking 6 full racks. another ? how much chacoal should i use for a 4-6 hr smoke? and MM or standard?

    Hello,im smoking some ribs this weekend,just wondering if it's best to roll the ribs or to cut in half and use a rib rack. seems to me it would be easier to cut the ribs up after the smoke if they are flat, or will the rolled ribs lay flat after they are done? and is there any difference in the...
