    Technivorm Moccamaster KB741 Coffee Brewer

I know some of you are aware of this highly rated, but expensive coffee brewer. I think they are $299-$309 retail. Type in "Moccamaster KB 741" into Google and/or Youtube and you'll get an idea. This is the one with the glass carafe and two switches (power and higher warming temp on/off). I've...

Lots of pork bellies since 2006. In fact, a few minutes ago I just finished cutting up a 13+...

    Yellow Rice

Thanks for the responses and your detailed recipe, Elsie. I had a dish at an Afganistan restaurant years ago sorta like that but it had cumin seeds, maybe black mustard seeds, and maybe nigella seeds. But the yellow rice here is the Latin dish which can be found under the Vigo, Mahatma, etc...

    Yellow Rice

Any one have a recipe for yellow rice? The prepackaged stuff isn't very good, imo. Thanks. Richard

    NY Style Pizza Dough

Thanks Bryan for the pizza dough recipe. We had been using a bread machine recipe that included sugar, powdered milk, oil. It was OK, but your simple recipe processed in the KitchenAid 6 qt pro is the winning ticket! Just made another batch - this will be a regular item here. Richard

Beef Jerky Questions - the Kevin Taylor recipe in Beef Section

Well, the beef jerky adventure has concluded. I used a Luhr-Jensen electric smoker (Big Chief) to finish the jerky. Hey, it is an involved, lengthy process and the Big Chief just makes it easier. The finished jerky is quite good, IMO, and it has gotten thumbs up from those who have eaten it...

Beef Jerky Questions - the Kevin Taylor recipe in Beef Section

I wish I'd known that TQ isn't necessary in jerky. I think I'm going to wash it, dry it with paper towels, and back in refrigerator for a day, and then smoke it, followed by the oven for 10 minutes. We'll soon see how it turns out in more ways than one. Thanks Kevin & Matt. Richard

Beef Jerky Questions - the Kevin Taylor recipe in Beef Section

Matt - I don't have to vacuum seal but want to be able to store the finished jerky, possibly for an extended period. I trimmed the two Choice brisket flats of most of the fat. You see jerky & Slim Jims tightly sealed in some material for sale in stores. How does it have such a long (?)...

Beef Jerky Questions - the Kevin Taylor recipe in Beef Section

In the Beef Section, there is a post about Beef Jerky on the WSM started by Stogie (Kevin Taylor). I have two questions about that beef jerky. 1. TenderQuik (TQ) is used in that recipe but he does not mention rinsing the meat after removing it from the TQ solution. I do rinse pork bellies after...

    Recommend A Good Toaster

Cameron - I don't know the year of the B14. Go to the page of toasters, 1940s onward, and scroll down just a bit. You'll see the Toastmaster "Best value." The heavy steel case is plated in highly polished chromium which is quite attractive. I'll post a photo later. Richard

    Waffle Iron

Tom - the Sunbeam CG has a temperature control dial. You can cook a crisp waffle if you want to. Michael at toastercentral included a small pamphlet of "vintage" waffle recipes from old cook books. They make 100s-1000s of waffles in the course of refurbishing/testing their vintage appliances...

    Waffle Iron

Just thought I'd post about our new waffle maker - a vintage Sunbeam CG waffle maker and grill - that we got from toastercentral.com. What a handsome chrome appliance - with a mirror-like finish. The 9" square waffle is divided into quarters which fit the toaster just fine when you have...

    Recommend A Good Toaster

Thanks to Cameron who posted in this thread about Toastercentral.com, I now have a newly refurbished Toastmaster B14 chrome toaster. A great American built product made to last. Richard

    Sweet Pickled Jalaplenos?

On a recent trip to Nora Mill (outside Helen, GA), I sampled some sweet pickled jalapenos. Very tasty - would be great on a hamburger. Any idea how to make 'em? Most of the pickled jalapenos that I've had (& made) are more vinegary and have an olive green appearance. These were a little crisp...

    Recommend A Good Toaster

My toaster is destined for the garbage can. With the darkest setting at 6, it takes 2 cycles to make toast "toast" dark enough. Can you recommend a good, 2 slice toaster? Thanks. Richard

    Morton Sugar Cure

Shiloh - yeah, it is hard to find Tender Quick locally . . . just not that much demand for the antique foodstuffs. I ordered it initially (shipping is more than the product), but found a small grocer who was willing to order some so I was then able to buy locally. The Morton Sugar Cure also...

    Cheerwine BBQ Sauce

I also had my first Cheerwine soda last week on a trip to N. GA/NC. I rarely drink soda, but had to try some of these sodas: Cheerwine Nehi Peach Soda Dad's Cream Soda Sioux City Sasparilla soda Blenheim Ginger Ale (the purpleish top one - hot) Dr. Enuf (real sugar, ginseng among the...
