Who makes the best Rib rack for the WSM...

A few years back I bought a Williams Sonoma rib rack. I'm happy with it. I'm not sure if they still make them, I got 2 for $4.00. I couldn't pass that up. lol

    Smoke woods

ok thanks guys. I'll try using some of the lilac and rosemary this summer and I'll let you know how it turns out. I figured since rosemary is such a strong herb I would go light on it to start.

    ash question

Thanks for the replies. Yup Ken, I am using briquettes and still using a water pan. I'm gonna try the clay pot method my next cook. I'm also gonna build a windscreen. Hopefully this will help me with the ash issue.

    Smoke woods

Dave, I saw that same site and figured I would ask here and see if anyone tried it. Every time I think of it I think of candied Lilac's. lol I'm just wondering if it would be noticeable in the cook or not. I guess I'll have to give it a try after i do a little pruning.

    Smoke woods

I normally use hickory and over the many years have used the usual types of woods. apple, cherry, alder, and oak. Last night I used some peach mixed with oak and it turned out nice. Has anyone used lilac or rosemary? I have some of each in my backyard and was wondering what to expect.

    ash question

I'm thinking of getting a Pit Minder. I did a cook last night and there was lots of ash, so much that i had to finish my picnic in the oven. Doe the blower in these control systems waft up ash? This is my concern if i do purchase one. yes, I know I need to build a wind shield which will...

    Has anyone seen this?

While I have never used that product, I would recommend the maverick ET-73 as well. There customer service is top notch. My smoker probe burned out when I first received it (about 4 years ago) and they sent me a new one free and this winter my transmitter died and they sent me a new one free as...

    NYC Meat?

Am I the only one who dilsikes the MR. Brown recipe?

I'm shocked at all the replies, I was certain I would get flamed for even mentioning that I disliked it. I did follow the recipe to the tee. I also use the freshest spices I can. It really was the flavor that I didn't like. I always try the original recipe before I mod it to my needs. Different...

Britu rub with Splenda a success!!

Tom, Thanks for the link to the brown sugar substitute. Spyro, I know, people don't believe it when you tell them there is no sugar in it. I have been using splenda since 2002 and I have only had one undesireable result while using it. I made some ice cream and it came out bitter tasting. Oh...

Am I the only one who dilsikes the MR. Brown recipe?

I made the pulled pork using the Mr. Brown rub and disliked it immensely. My next pork butt i'm gonna use a simlpe rub. Maybe just salt and pepper. I'm not really sure yet. Am I the only one who dislikes it? Just wondering.

Britu rub with Splenda a success!!

Cliff, I used the baker's bag(9.7 oz) not the packets. I used a ratio of 1:1. I still used the brown sugar though. The only reason i even tried it is cause i'm a Diabetic and need to restrict my carb intake. I hope every one likes the results as much as i do. The next thing is to try the brown...

    Fajitas

When I make fajitas i just put the skirt steak in the smoker for about 1 hour while i'm cooking something else. This gives it a nice smoky flavor but does not cook the meat. Then I cook the fajitas as i normally would and they come out great!!

Britu rub with Splenda a success!!

I just finished my ribs using splenda instead of regular sugar and I used kosher salt instead of regular salt. These turned out to be the best ribs I have made ever!!. They turned a beautiful color and were a lot less salty. I also finished them using "A Favorite Barbeque Sauce" from Paul...

    Bull's-Eye BBQ Sauce copycat

Well, I have only made 2 so far. A Favorite Barbecue Sauce and Mild Memphis Barbecue Sauce. I liked them both. I like the Favorite one a little better. The reason I like Paul's book is it is a guide on how to make sauces that you might like. You can add or remove ingredients that you like or...
