    The Great Debate: 18 or 22?

    I have both. Got the 18.5 first and use that one more, but wanted the 22.5 too. What can I say, I got hooked. It nice having the 22.5 when you need it and I have run them both at same time for a few cooks.

    This is my 1st attempt at bacon. 3 lb. belly from local farmer. Used Ruhlman recipe and started last Saturday. I have flipped each day and the belly has given off liquid.     I smoked a 12# today with tapple brine. First time I done a turkey. It turned out great. Also did a plain breast in oven and it wasn't close. May be best turkey I have had.     Rib question

    I am smoking St. Louis style ribs on my 18.5 today and have a question about cook time for the trimmings, which will be on the bottom rack. I know they are done when they are done, I am just looking for an approximate time for planning purposes. I am using SYD recipe. Thanks.
