I have an 18 and would cut ribs in half and drape packers over foiled firebricks etc. Finally got a Cajun Bandit 22 conversion for the extra room, (can't have too many smokers). I use a smaller charcoal ring in the 22 conversion as it allows me to pack the charcoal tightly since I use lump.

I use the gas starter system on both my performers as well as for lighting the chimney for minion starts in the WSM and Cajun Bandit. Works great. BTW, scored both performers on CL for a total of $145. Bargains are out there if you are patient.
I use hinged ss grates in my Cajun Bandit on the performer and on my 18.5 WSM. Easy to clean. On the WSM the bottom grate rests firmly on the grate support strap nut about 1/2 inch higher.

I agree that the current price can't be justified. I check back with Weber CS periodically to see if they want to sell them at a more reasonable price. The first two I bought from Weber were about $18.00 when they were still shown on the website.

Got my EZ Que off ebay and love it. Roadside chicken going on tonight. A rotis gives more options for my grilling, roasts, turkeys, whole chickens in the cradles, Roadside chicken thighs in the basket.
For the charcoal grate, call Weber CS. For cooking grates, I use a pair of hinged 18.5 kettle grates. Works perfectly and readily available. Bottom grate will sit on the bolts just above its regular position.

The picture shows the wood handles and tab covers after 2 butt cooks. I have been surprised that they don't seem to pickup much smoke crud. I just applied Watco oil to finish them and it seems to be working.
