    How many racks of ribs?

Just wanted to let you know that I did cook the 5 racks, but the biggest of the eaters didn't show (sent home leftovers for him) and the 4 kids ate a combined 1 rib between them. So, we ate about 3 or so of the 5. I cooked a couple of fatties for the first time and I will definitely make those...

I cook them the same way as pork -- for about 6 hours. I like them very tender.

    How many racks of ribs?

Thanks for the input. We'll have other apetizers that the guests are bringing too. I'm going to go with 5 racks -- maybe we're not as big of eaters as I said (need to leave room for the drinking too!). I'll let you know how we make out! -Steve

    Rib Racks

Thanks, Guys. If I don't use a rack (I'm cooking 5 racks by the way but I'm hoping to fit them all up top if possible because I'll cooking other stuff below), I guess rolling another option? Do you just roll them small enough so that they all fit? And then tie with regular string? Will this...

    Spare Ribs

I've cooked ribs a few times and the last time they finally came out the way I like them. I basically did them exactly how Erich says. Took 6 hours. I'm too lazy to use foil but I do spray with Apple Juice about every hour after the first 2 hours. Good luck. - Steve

Anything you different for beef ribs?

I made beef ribs 2 weeks ago and they came out awesome. They were the best beef ribs that I ever had. I had always grilled them before. Cooked a rack for about 6-7 hours. You'll love them!

    Buying Wood Chunks

I could have sworn I read a post about this recently but can't seem to find it. I live in NY. Where do you all buy your wood chunks? HD seems to only carry Hickory and Mesquite and my wife doesn't like the Hickory. Any suggestions would be appreciated! Thanks.

    First Butt

Thanks for all the input, guys. Probably I should have just added some sauce to it after I pulled it. I just wasn't really sure what to expect. Still tasted great and the guests loved it! I did foil and let rest. There is definitely a chance that my thermometers are off. As for checking temps...

    First Butt

Just smoked my first Butt (bone in) on Saturday. I live in NY and don't think I've ever even eaten pulled pork before! Smoked it for 12 hours (was about 9#). Bones pulled right out easily and meat pulled easily as well. I have 2 questions. The meat was a little on the dry side -- is this normal...
