    Minion method question

I too really questioned using the Minon Method. Didn't sound good to me either as I had always lived by the rule of fully igniting the coals before putting the meat on. Now, having said that, I have used the Minon method several times now and let me tell you, on long cooks it is absolutely the...

    Question....20 lb Turkey smoke

I have smoked several turkeys and am trying the apple brine for the first time this year. My turkey is around 22lbs and I am planning or about 4 hours or so. I will try and keep my temp between 325 and 350 degrees. Good luck.

    Charcoal bins on performer

I have kept the coals in the bin inside a large yard plastic trash bag and have never had any issues. I did this when I lived in Virginia (out on the deck) through snow, wind rain, etc. Now that I live in Southeast Louisiana, I still haven't had any problems. If there would ever be moisture...

    Costco Choice Ribeye

Made a run to Costco today. It isn't as convenient as it was when we lived in Virginia. They have some really good beef and I picked up some very nice choice skirt steak for fajitas. Went looking for some of the beef short ribs I have seen on the site lately but they only had individual ribs...

    New WSM Basic BBQ Chicken.

Nice cook! PS, I'll never understand why some folks feel the need to be critical of how or what a person drinks. Lighten up, Francis (Bob) (From the movie Stripes)! Not criticizing, just appreciate the tumbler and bourbon. Curious as to the mixer and wanted to hear his perspective. After...

    Cajun Bandit Door

I bought the kit from Cajun Bandit which included the stainless steel door. I am totally satisfied with it. It is quality and is better than the door that came with my WSM. But, having said that, both the WSM body and the door are metal. Metal on metal will never make an air tight seal. In...
