It's got a chip on the lid and bowl (I'm assuming it was dropped). It's not out of round though.

My Costco usually carries a half dozen to a dozen prime packers at $3.79/lb ranging in weight from 10-16 lbs. They also have a good selection of flats but they are close to $6/lb.

I had the same issue with my first pork butt. Got up in the middle on the night and didn't need to!

Wrapped at 170 and brisket ran up to 190 in an hour. Doesn't seem like it could be done this quick - only at hour 7. Thinking I'll give it atleast another hour before probing.

In the middle of my first brisket cook. Put a 12lb whole brisket on at 4am and have been running 240 at the grate. I'm already up to 153 on the meat. Does that sound right given that I'm less then 2.5 into the cook? I'm thinking my probe might not be in correctly but don't want to open up to...

I put the chimney on the WSM charcoal grate when lighting. Thanks all for the feedback and ideas. Ill start trying these on the next smoke. I also think I need to dump sooner so I'll definately start doing that as well.

Yes sir. Two sheets of newspaper rolled and placed in the bottom. Maybe I'll try the cubes next. Not sure how the wife will feel about me dropping $70 bucks on a lighter (although it sounds well worth it)...have to work on the sales pitch for that.
