    Thanks ChuckO, I'm giving the PB and ribs a try Friday for the 4th. I'm stoked to see how this turns out..may not be anymore overnighters if this works out...unless I'm planning on lunch :-)

    Thanks for the post Mike, I was turned onto this by ChuckO and I'm going to give it a whirl Friday and see how it turns out..... quick question though....did you trim the fat cap off of these?......I'm wanting to do some ribs too and I'm thinking smoke the PB on the top rack for around 4 hours...

    @ChuckO...So after the ribs are done do you move the PB to the top rack? Also I've seen where a lot of folks are talking about foiling their ribs, when do you do that and how long? I would like to know your trick for the PB if you want to share the link.

I found one at California Pizza Stones "They also sell through Amazon", I have measured the water pan and a 19 inch stone should take it's place without modification. The one I've found is 5/8" thick and seems like it would do as well for...

    I have a maverick 732 and love it...if you are relying on your stock thermometer you are not getting accurate info, I have a new wsm 22 and my stock unit is way off!! It has alarms that u can set for low or high smoker temp and an alarm you can set once your meat reaches a certain temp..., range...
