    hongso PCH834 searing grate

Hi, Dustin. Thanks for your reply. I read the negative reviews about the related products, but decided to give it a try anyway. It seems like decent piece of equipment. I don't think it will be useful for reverse sear because of central location, but did a good job on burgers. We will try...

    dry rub applewood smoked chicken

David, I do chickens like this to pull, but I do low and slow, so the skin is no good. It makes great chicken salad, though. Was your cook high heat? What was the rub? Wood?

    latest opinions on covers

Original cover for my 22.5 is shot. Vinyl is all stiff and cracked and the cooker got full of water and mold. I wanted to replace with something other than the cheap weber product. There are a few alternatives out there, and I wanted to hear any relevant experiences/opinions.

the burger ''bubble'' in the US might be about to pop. (article)

I have had my family on a transcontinental road trip over the last few weeks. When we made it to Burbank California we discovered a chain called Umami Burger. It was so good we ate there two days in a row. The Korean BBQ Burger was outrageous!

    Jerk Chicken

That looks like the variety that I find at the asian market run by a thai couple. They're thinner than a finger and turn bright red when fully ripened. I have a big bag of them in my freezer. They have done well there.

    pre sliced belly

Bob- thanks for the link. Same exact problem/question! I guess I'll have a better idea what to do when I lay eyes on it. Right now, it is on its way with my brother, so returning isn't option. How do you prepare it when you cook it fresh? I bet it is hard to mess up. To quote Emeril, "pork...

    pre sliced belly

Enjoyed making bacon with Bob's process so much, that I have been planning to do it again. I don't have a local Costco, but my brother does. I have seen posts here about the bellies there, so I asked him to pick one up for me. He said all they had was pre sliced, so he picked that up. I am...

    vortex questions

Thinking about getting one of these. In addition to the usual uses, I was thinking it might be handy at firing a 20 inch round bottom wok that I have. I saw a thread here where someone listed dimensions, but I wasn't sure if that was small or medium. My grill is a 22.5 performer deluxe. My...
