Windbreak And More Room For Ribs

Nice windbreak and mod. 12 racks on an WSM is great.

    Unknown BBQ WSM Hinge

J, I received my hinge today and it looks good and sturdy. A little surprised that it got here so quickly. If this weather cold continues it'll be a while before I get around to installing. The directions look simple enough and I do have the preferred unibit for drilling. I'll let you know...

    Unknown BBQ WSM Hinge

I'll check it out when the hinge gets here. Hopefully it won't be a problem. About the heavier legs. My guess is that the added weight of the legs is for windy conditions more than the lid hinge per se. I've heard of WSMs blowing over in extreme wind. I can protect mine but some the guys...

    Unknown BBQ WSM Hinge

The guy I heard about the hinge from mention that the guy is working on one for the 22.5" kettle. I have a slide aside on my OTG and don't use my OTS enough to warrant it. The OTS is only used when I need more capacity than the OTG.

    Unknown BBQ WSM Hinge

Can't tell for certain about the legs but they do look sturdier than normal. Had thought about a potential "sticking lid" problem. Could be. I've clean the lid rim a few times due to severe tightness.

    Friday Ribs

I'd like a rack or two of those. Haven't had ribs in a while and those look great.

    Unknown BBQ WSM Hinge

They have a website with a picture of the hinge. Kind of expensive at $40 but it looks sturdy. Having to deal with lid is by far my biggest complaint with the WSM. Never seems to be a handy place to put it when I spritz or baste. Here's a link to the website. http://unknownbbq.com/shop/...

    Unknown BBQ WSM Hinge

Hey folks, Been away for a while. I just ordered a hinge from Unknown BBQ for my WSM 18.5 and was wondering if anyone has tried them. A guy on a woodworking forum recommended and I thought I'd give it a try. I searched the forum and didn't come up with anything, but wanted to see if anyone...

    Weber recommendations?

I like the one-touch gold series because of the ash disposal. If you don't want to go that route, you could give the smokey joe a try to see if it's large enough. At worst you'd be out about $30 and have a good traveling and secondary grill. You don't want to waste your money on something...

    Longer Probes

I'm in a different situation and can get my smoker as close as I want to the table that I sit my digi on. I'd ordered the longer probes initially thinking I'd have a different set up.

    Longer Probes

I bought the longer probes (meat and pit) with my digi dx and found I really didn't need them at all. In fact, the excess gets tangled up. They don't do me much good on my WMS because the wire running from the digi to the pit fan is the standard length. I ordered a spare set a couple of...

    What next?

It's getting close to turkey time.

    Is Covering the Grill OK

+1, I also try to get as much of the ash out as I can even if I plan to reuse the coals. The ash holds moisture. I never had a problem with a cover. If I were worried about I, I'd remove the cover every now and then to let things air out. IMO, the benefits of regularly using a cover far...

Correlation between amount of fuel and temperature control

Way too many lit coals. I would go with 10 or so lit chimney coals using Minion Method and let the WSM get to within 25 or so degrees of the target temp and shut the vents down at least 50 percent maybe down to 25 percent. It's easier to get the temp back up that it is to bring it down...

    WSM Blankets...

Congratulations on the blanket. They're expensive but put together very well. I use the pit thermometer on my digi. A digital pit thermometer would be nice to go with the blanket.

    WSM 1st Trial Run

Congratulations! Makes me hungry thinking about it. I had grilled talipia tonight.:( Not too bad, but certainly not ribs. It's a diet thing.

    1Q110 - Amount of Charcoal

I have an ique 110 that I use on my kettle sometimes and a digi that I use on my 18 WSM. The fans are pretty much the equivalent and I'd say an entire chimney of lit coals is way too many on your 22 WSM. I use 10-12 on my WSM and turn the digi on when the temp gets around 25-30 degrees for...
