    Prep Lollipop Chickens

I think the answer is yes, but if i wanted to do lollipop chickens at a comp, could I trim or "lollipop" the drum sticks (i.e. cut/remove tendons, french the bones) the day/night before the comp and still pass meat inspection? I remember someone posted somewhere once something along the lines of...

Threw in the fridge to harden and the sliced! Good Lord this is some good stuff! Can't wait to do it...

    Monster Burgers

Shawn W kinda inspired me with this thread. Let's see your monster burgers! A few years back me and my friends for some reason had this thing for just making bigger and bigger burgers and seeing who could eat them. Here's a few pics i was able to dig up.

My sister and her friend came to visit last week and they wanted me to cook. So here is what was on the menu for Friday night! Cauliflower mash, pig shots, grilled zucchini and korean bbq chicken thighs! I don't know what the trigger was (maybe the cauliflower?) but this was followed shortly...

What to vend at a BBQ Comp?

I'm deciding whether or not to register for a comp coming up in January. I've never vended while competing before and want to try to vend this one to recoup some of the costs. Trying to come up with some ideas of what to vend. Any suggestions? I have an 18.5 WSM, a 22.5 WSM, two 22.5 kettles and...

Finally Crispy Skin Pork Belly (Lechon)

So big ups to Enrico and Wolgast! I was finally able to get that crispy skin pork belly! Scored the skin and seasoned using SPOG, let it sit on a rack in the fridge for about 5-6 hours. Fired up the 22.5 MT with coals along the outside with a pan in the middle. Used the aluminum ball to arc the...

So I plan on smoking our turkey in the 22.5 WSM but I'm thinking about laying a layer of bacon on the turkey breast. I've done this on a rump roast before as a way to 'self baste' but wanted to ask if any of you guys have tried this on a turkey before? Any thing I should be worried about or any...

    Finally 22.5 WSM score!

Drove 4 hours total on Saturday afternoon to pickup this 22.5 WSM. I've been wanting a 22.5 for a long time after realizing the capacity constraints of the 18.5. Finally saw one on CL Friday afternoon about 2 hours south and picked it up Saturday for $200. The code on the top vent says AU so...
