    Rubbed down a couple butts with Willingham's Rub and slathered with Georgia mustard sauce some hickory for smoke and 12 hours later here they are!!

    WSM Christmas Prime Rib

    I fired up the WSM with apple and cherry wood for smoke and threw on a 9lb. prime rib for my brother for Christmas eve dinner! Sorry no sliced pic as my brother will get to do that tonight!! took it to 132* internal and 350* at the lid.

    All nighter and slept like a baby

    Threw a couple of 6 lb. butts on the WSM for an all nighter. Slatherd with Maurices sauce and Old South Rub for seasoning. Cooked for 16.5 hours to internal of 196* at 225* lid temp using apple wood for smoke. It got down to 20* last night as well.

    I crumbled up a couple fatties to put in my chili for Christmas dinner.

    Brisket WSM style

    I cooked up a 5lb. brisket today. coated with mustard,seasoned with Texas BBQ Brisket rub,full ring of charcoal,full pan of hot water,Lid temp to 225*,Pulled out of WSM at internal of 192*. Did not foil until I removed from smoker. Let set for 30 min. I used a couple chunks of hickory for smoke...

    1- 8 lber and 2- 4 lbers on the WSM Couple of chunks apple and cherry! Big Bob Gibsons Rub for taste, Temp at lid 226* WE HAVE LIFT OFF!! HAPPY 4TH EVERYONE!! Pulled pork on the way!!
