To reiterate for emphasis: they are very easy to overcook, and not very good when they are.

Matt, Sorry to keep harping on this, but have you had a chance to try your pot on a SJS/SJG to see if it fits sufficiently well? I hope it does, but the diameter seems a bit short.

Before you do anything to it, what is the diameter?

You'll have to wait and see. For my SJS, one I found with a width of 13-3/4" was perfect, but one I ordered from Target was 14-1/8" and too wide. If it's the right width, that 16" height will be nice.

    Hey Smoker Joe Guys!

It's always longer than I expect. It's also extremely easy to add more charcoal.

    Cooking Thermometer?

I finally got sick of el-cheapo analog and digital probes and picked up a used Fluke digital thermometer on EBay, along with an instant read probe from thermoworks.com, the folks who make the Thermapen. The cheap ones always seemed to fail at exactly the wrong time (like Christmas day when...

    Double chicken breast

Mildo, That looks wonderful. If you could be so kind as to describe the cooking process of the chicken, I would greatly appreciate it. For example, about how long did you cook it directly, and how long indirectly with the onions and beer? Thanks!

They fit just fine in mine. I think someone else in this thread mentioned it could be a tight fit over time as grease and smoke residue build up on the inside surface. On mine, there would have to be quite a bit of buildup. I'm going to start my first pork butt tonight...

S J. Gold Mini WSM Smoker

I finally got to work this weekend building mine. I ordered the IMUSA tamale steamer from Target through Amazon since my local Walmart didn't have any in stock. It arrived in a few days, but alas, it did not fit as others have commented. It has a 14-1/8" width (at the base), 11-5/8" height (w/o...
