    Charcoal only griller

    I gave away my gasser. I never was happy with the food off of it. I have two grills: a hasty bake and a weber three wheeler and a WSM. All coal all the time. The only thing I miss is the side burner for boiling water or heating oil for frying.

    I did a chuck roast for shredded beef taco's today and a rack of beef ribs just because. Also did some abt's and some stuffed poblanos and an egg plant for baba ganush. On new years we will see a couple of butts go on for an overnighter. A very happy holiday season to all.

    Yeah I hear ya, but I had ok results with a frozen butt before. Maybe not comp grade but the family loved it. I went out to check the smoker this morning and it had cooled off to 180ish and the meat was holding at 155 so it went into the oven. Cook still in progress.......

    I will never JUST cook a couple slabs again !!

    I used to cook in a Restaurant where we would bake ribs 40 racks at a time then freeze them wrapped in cellophane and then nuke them from frozen for 5 minutes throw them in hot BBQ sauce for a few minutes then caramelize under the broiler. People liked our ribs. Go figure.
