    First try with clay sauser {dry)

    Going to try a "dry" cook with a clay sauser. Should it also be wrapped in AL foil? How about putting a AL pie plate on top to the sauser to catch some drippings for the final sause?

    BIG 4th coming up

    Still hot and smokey here in Durango but almost time to cook. Plan on 15# of cat fish nuggets, 15# of cat fish fellets (blackened), 2 large briskets(off set smoker) and 4 large pork butts( 18.5 WSM). Plenty of cold beer, team roping round robin, and a lot of good fiends. Drop by if your in town.
