    Sounds like you needed more charcoal, and try using hot water in bowl at the start of the cook inastead of cold water

    Mike, everything you said sounds good, I to have had little success with the smaller briskets, but for some reason the full packers 12 - 15 lb seem to come out better, I dont know why.

    You could just flip it over, if its not warped to bad, or pick up another grate and install it across the other one to form a cross pattern as shown in the operating and mods section.

    James a 16lb butt, that is going to take a long time at 225F.I usually allow for 1.5hr per pound. I think you should cut it in half and smoke at a higher temp 250 - 275F.

    Mario, another thing to do after this cook is put a couple of washers between the inside of the smoker and the grate mounting bracket, and also make sure your middle section is not out of round.

    I fill chimney about half way, light it on the performer then dump on the grate or in the baskets, depending on what I am cooking.

    Dom, I ordered mine from Homedepot.ca, got the blue one and had it delivered right to my door. Give them a try.

    Not to rain on your parade, but the OTG's will have the hinged cooking grates, OTS don't, and I think OTG have 2 handles on the bowl. Still good price to pick up 2 OTS/OTG

    Ron I saw the same rotiss, on CL. I was thinking about but I have a rotiss on my summit and cant remember the last time I used it.
