Chesney yes this was done on a kettle 22 1/2, baskets on either side and I did have to add coals quite a few times. I did not have a probe in the whole time I just checked with thermopen near the end, I allowed...

    Geir, I smoked it for 5 hours at 190F (88C) and pulled it at 150F (66C) internal. The bun lookin things are my wifes home made biscuits.

    Stan I think you are over thinking this, put one thermometer in the same place as the performer and leave it at that. Remember temperature is only a guide it is done when it is done.

    Get the metal shop to quote on all three metals with medium to heavy gauge (18 - 22), stainless will be the best but how much are you willing to spend ??
