Wife ditched me to go to our camper, I'm heading up tomorrow after I finish work. Just so happened that I received my new Craycort grates today too! Decided it was a good time to break them in, so I slapped them on the Performer. Just a simple cook, Chicken Wings for dinner tonight and lunch...
Looks like Craycort is starting their Fathers Day promotion with 15% off, although when I try to apply code, doesn't work. I'm sure they will get it working properly soon.
I have been waiting for this, as I would like to purchase one for my Performer. Seems like the grates are highly thought...
Looks good - Pork looks amazing and I wouldn't mind a piece of that chicken either. I take it that you grilled the chicken at the cabin - what set up for cooking do you have there??
Also, just curious as to what your bottom vent settings were on the WSM for the higher temp cook??
Prairie Fresh - especially the "Natural" brand. No preservatives - all natural, have always had good success with the pork butts, boneless loins, spare ribs and the back ribs.
We used a Smoky Joe last year, but I felt it was too small and sold it to a friend. Used the proceeds to put towards the Jumbo Joe. Absolutely love this grill - we keep it right with our RV on a seasonal site. But to answer the OP original question - Jumbo Joe should serve you well, but we also...
1. Get your raw chunks of meat sprinkle with your seasonings, and grind through the plate once. Pull off the head and clean out the bits of meat in the neck and the ones that get stuck between the plate and knife. The reason for doing that is so that the meat will run faster the 2nd time and...
Any local butcher shops?? I'm always buying in things that customers request (if I can get them). If you have a butcher close by, ask the owner if he carries them, and if he doesn't could he buy some in? Another place to check is a local slaughterhouse, especially if they are USDA inspected.
I'd like thank Robert, who gave me the inspiration to try a pizza - he just recently posted a thread here:

Didn't want to hijack his thread, but wanted to give him some credit. Anyways been wanting to do pizza on the Performer...
It's a boneless pork loin, brined and cured, but instead of smoking it for Canadian Bacon, you leave it raw and roll it in corn meal. Then you can slice it and pan-fry, grill or bake. My family has made it for decades, one of our favorites.
This is my first attempt to share some photos so please bear with me -
Decided to make some quick breakfast sandwiches on the grill this morning, so I grilled one of my all time favorites, pemeal bacon.
Grilled on my Genesis E-330.
Pizza looks good Robert, really watched how you did it because I am going to attempt my first one this weekend. Just wondering on the coals, how about a full chimney of lit briquets - and then a 1/2 - 3/4 of unlit lump on top of that?
Going with a similar set-up: Weber Performer, pre-made...
I think it is very accurate. I use the Weber On The Grill app for cooking times - so far I've done steaks, chicken breasts, beer can chicken and hamburgers using the suggested cooking times in the app (love the timer in it too!) Everything I cooked so far has been perfect.
Hi, I just bought the Genesis E-330 two weeks ago to replace a Vermont Castings grill that getting parts for were harder/costlier as time went on. Do yourself a favor and get the Genesis, yes it does cost more, but it will last a long while, and getting replacement parts will be very easy for a...
Interesting question. I COULD use charcoal, as I try to keep at least 4-6 bags of charcoal on hand. I would probably use my Genesis in a situation like that, because I always have 3 - 20# LP tanks in rotation at all times. I'm lucky that I have an RV place that fills propane literally 3 minutes...
