    Temps will not come up!

Try another round without water and see what happens. While it's not my favorite be a long shot, I use a lot of KBB simple because it's cheap (on sale) Here was my Christmas turkey cook using a full chimney of unlit followed by a full chimney of lit on top. With all vents wide open, I had the...

    Lodge Cast Iron Skillet

While true that Lodge CI does come pre-seasoned, it's only an initial seasoning. No where near enough and I'd steer away from eggs for a while. Stick with bacon first, even a few strips, then cook whatever in the bacon grease. Me, I prefer taters or veggies.

    Cast Iron grates???

I *love* my CI (cast iron) grates in the gasser! But, not so much in a kettle. It's virtually impossible to take the grates in/out of a kettle without taking them apart. With charcoal - you have to remove the grate every-time to add charcoal. You basically never have to remove them from a...

Replacement Grates for Genesis Silver B - 2004

The Genesis Silver came with porcelain cast iron or porcelain coated stamped steel grates which are shaped just like the stamped SS grates. Your photo, is the porcelain coated stamped steel. The CI grates, which are my personal choice, don't quite last forever. But I sure got my $ out of the...

Tips for emptying water pan of water/drippings?

Scoop out the solids and toss in the trash. From there, you'd be safe to dump the rest down the drain. I do like the freezing idea! When I got my WSM, I used water one time. From then on, it's been a foiled clay saucer and I just toss the foil the following day and I'm done.

    11lb pork shoulder

James, I probably smoke pork butts more than anything and typically purchase in the 9 -10 pound range. I can bank on finishing the cook in the 12ish hour range. But... Your smoker temps will have a much larger factor on time than anything else. Personally, I like the 260-275 range. If...

1995 performer ss touch n go lower bowl replacement to use new style damper blades

There's a few options for ya. Weber discontinued the 7409 ash sweeper, which is the one you need for an exact replacement. Do you have any Ace Hardware stores near you? They are a great source for having these hanging on the rack for $15 bucks. Just last month, a buddy reached out to me...

    Fuel options...

Pick up a bag of Stubbs from Lowes (or Amazon, Walmart, etc) and give it a try. It's my absolute favorite for all the reasons you listed. But,,, I typically burn KBB simply because of the sales price cost.

    Sustained heat

Bryan --- some great advise in the replies and not much I can add. I love lump for grilling, but prefer briquettes for the WSM. If you're not-so-sure about using KBB, pick up a bag of Stubbs (Lowes, Walmart) as that's my absolute favorite charcoal. (but I have 800lbs of kbb) It's an all...

How long for a 22 to 'come down'

^^^ Keep cooking on it, it'll get better. As long as the coals DO snuff out completely, you're doing pretty good at only 5 cooks in.
