Hi John, Just left a note on your paella pan question, I never had any problem with the roti ring fitting on my performer but, my set up is not technically a Performer, it’s pre gas ignition cart design.

Treat it like cast iron a little more, after use, wash fully, dry, and give it a very light wipe with oil.
