    I've been liking all these WSM Mini builds I'm seeing. I have a SJS and may give this a try. My only concern would be the charcoal ring. Where would I get some expanded steel. This cake pan idea looks like the best option to me. Thanks for sharing. I now think I'm going to try this mini build.

    Sorry, John. I guess I'm seeing the wrong models? The 2 I'm seeing when looked up the numbers you provided show one with and one without the gas assist. They both have timers (which I've never seen before). I agree with Justin, i think the gas assist is what makes the performer.

    It looks to me that the 1431001 model has the the touch n go ignition systemgas and the 1431001 model does not. I have this 1421001 model. It has the touch n go ignition. I got mine at home depot 3 years ago. Can't remember what I paid.

    Only used about 10 - 12 lit coals. The others that look lit were left over from another cook on my SJS. Don't like wasting them, so I close all the vents down to extinguish them. Then re-use them. Decided to just add them the WSM right before I added my lit coals.

    Thanks for great comments. I will be eating leftovers today. I actually used a new sauce on the PP. The recipe came out of Myron Mixon's book. It was pretty good. Looking forward to some football and leftover PP today. ;)

    Replenishing hot coals into a WSM?

    I had to constantly add lit coals to my old Brinkmann during a cook. I used a deep fryer ladle. I could get 8 - 10 coals on it at a time. It has a long handle to reach into the coal chamber. Used tongs to place the lit coals on the ladle.

    Temp hit 254 about an 45 minutes in. Closed 1 vent and other 2 others down to about ¼ each. Maintained 230 – 240 all day. 6.25 hours in, wrapped in foil to finish it off. Hit my target internal temp at about 8 hours total cook time. Removed it from the smoker and let it rest in the foil...
