    Thermometer question

    I'll add another vote for the BBQ Guru Eyelet. Quick and easy to install. Or make your own as shown here. I'll do the under the lid sometimes but I prefer not to.

    How many?

    I would think 30 lbs should be good, although like Dave said I don't think 32 would hurt (4 @ 8lbs) I usually get a little over a 50% yield from my butts so at 6 ounces a piece it would put you right around that. Good luck!

    Unpleasant mold discovery inside my WSM

    I too have noticed this on my last couple cooks I've done. Like many others I just grab the hose, spray it out, and give it a quick scrub with a brush. I figure the heat from the cook should hopefully kill anything left.

    I'm like JimK, I keep a therm in the top vent which doesn't allow me to adjust the top vent. I don't have a plug but the therm itself does block some airflow. I use my WSM for temps below 350-375 and my kettle for temps above 325 or so, so I haven't had the need to adjust it

    I had been wanting to do a thread like this for sometime, just never got around to it. Glad somebody else had the same thought. As for work, like Mr. Correll Except I'm still a Land Surveyor. Still have quite some time til I can say I'm retired and have been doing it for 30 years.

    I agree with Shane. Tri tip makes awesome sandwiches if you can find it in your area. Cook time would also be less.
