    I agree, they definately do take a little longer when held between your fingers or to take the ambient temp but they aren't really made for that purpose Try the ice bath. That should give you quick results and allow you to check for accuracy.

    Sounds great David. The difficulty with bringing the temps down is the reason that I prefer to do a reverse sear. I cooked mine at about 225 til it came to around 120 and then let the coals get hot and seared it. Gotta love the leftovers! Take care,

    I agree with Matt. I don't think that one of the baskets would hold enough for a full cook. Just spin it around and use it to hold the coal in place.

    Sorry if I wasn't clear. I wasn't asking about getting a custom grill, I was curious if a dealer here could order grills that weber makes that aren't available here such as the ones in europe. I think George is getting at the same thing I am.
