Carne Asada Tacos and Happy Memorial Day

Last night I made some Carne Asada tacos as I had a craving for some. I marinaded it for a couple of hours using some fresh cilantro I had growing on the patio. Opened a Corona and lit the grill. While the grill got ready, I prepped the fixings for the tacos. I got the grill to 450 this time to...

Clay Pot Saucer Mod in WSM, will this work

I exchanged the 16 in for the 14 in saucer and wrapped in it 3 - 4 layers of foil. That made it large enough to fit where the water pan goes all by itself with out falling. I now have just the foiled saucer and no water pan so I can pile my KBB for longer cooks without the water pan getting in...

Clay Pot Saucer Mod in WSM, will this work

Hello all. I want to replace my foiled empty water pan with a Clay Pot Saucer for when I do long cooks. I plan on smoking a brisket this weekend and I want to know if this will work before I do it. Below are pictures of the current setup and the proposed clay pot saucer mod. I am just worried...

    Mandolin recommendation

Which ever one you get, ALWAYS use the guard. My wife and I both have been "bit" by our mandoline. They are great tools, but they are very sharp.

    My Hand at Yakitori

This weekend I tried my had at Yakitori. I found a recipe on the web and marinaded the chicken for a couple of hours. I saved some of the marinade to reduce down to make the glaze, but I got busy and burned it. So I had to come up with a quick sauce to put over the chicken while on the...

WSM automatic temps controllers are they needed?

I use my IQ for overnight cooks just for piece of mind. For shorter cooks I don't use it, but that is just me. I do use my Maverick 733 for all cooks to help me monitor grate and meat temps.

My Hand at Carne Asada Tacos

After seeing all these posts about Carne Asada tacos, I decide to try my hand at making this dish. I pretty much followed Tony's recipe and they turned out great. My wife said she likes tacos this way from now on, so it looks like I will be grilling more skirt steak in the future! I like the...
