    Not sure I understand the question, but the coal ring should indeed be a smaller diameter than the coal grate. As you'll need that space for air-flow around the ring. Heck, some even purchase the ring for the 14.5 and use it on the 18.5 for various reasons (efficiency, smaller fuel, ect...)

    Very curious indeed. Whee you using chunks of wood? Wonder if one of those flared up while you had the lid off wrapping? Did you check the coal ring at all during the flare up?

    About 6-8 cooks into my 22" WSM, and I've got a pretty good handle on temps... Like Steven, I tend to close down one vent (usually the down-wind vent) and use the other two to control the flow. The only temp spikes I get are during wind gusts. Then again, I typically cook below 275...

    Yeah, I'm still working on my documentation. Half this cook I was cursing myself for forgetting to take a pic (i.e. - the finished ABT's, first putting the butt in the smoker). But I did get the important stuff right (the food)

    Local butcher brought this bad boy from the back room and told me I could have it for 2.49/lbs. Took the pic right before I was going to trim her up. Trimmed, rubb'd, and injected (using the Mr. Brown recipe) Minion method with Oak chips started around 10pm About 13 hrs into the smoke...

    So, I'm missing something. A bit unusual for me to brown the beef in water and beer.....and then i use that I pour that into the onion mix? The corn starch to thicken? Love to try this, but not sure I understand.(well, I get that I left a bunch of steps out above, but its the "browning liquid"...

    I just picked up a 10.5 lbs Boston Butt for Monday as well! I'm looking to try the "Mr. Brown" recipe from the main site. I'm just curious how long this sucker is going to take. From the way it sounds, somewhere around 1-1.5hrs / lbs (@ 250)....?

I left with the butt going to Smoke on Monday. But I'll be coming back for the brisket! (questioned, is 4.99/lbs for "untrimmed" brisket...

    Seems the wifes request of not doing pulled pork may not go as she hopes (lol). Intrigued by Steven's suggestion though. When you say chunks, you're cutting this up raw? In small chunks? Considering you're smoking for 5 hours, I'm assuming not that small of chunks.....?

    Frozen wings on the mini

    I'm looking at smoking my first bird on my 22 WSM shortly. I've yet to have her north of 270 as all I've done so far on her was a couple of rubs and shoulders. The idea of getting my beast of a 22 up to 325+ seems pretty daunting, but I look forward to "givin' 'er all she's got!"
