    If you are only going to do one Tom, I'd fire up the WSM around 11pm. Going on the 1.5-2hrs per that's roughly a 12-16hr cook time making it done at 11am-3pm. People have had it wrapped for quite a long time. I haven't done more than 4hrs.

    Yeah it's great stuff. I missed that sale sadly. I was hoping that they'd do it again for memorial day but no. So now I'm hoping they do it again before the end of the summer. A place had a sale on RO lump which is all I normally use so I stocked up on that.

    congrats Martin! When you do some cooks, make sure you post pics if you're going to talk about it. Rule of thumb on the board: No pics, no cook. Just a heads up!

    Good luck Walter. My only suggestion is that if you are not using water I'd rotate half way through cook. If you are not using water the bottom grate will be much hotter.

    If you factor in the bones, there is virtually no meat on those. That's the problem IMO.

    Cooking 6 butts

    Good luck with the cook Jeff. 6 in the 22 is no problem. Paul was right you might want to rotate the butts half way though the cook. Especially if you are not using water in the pan.

    John I haven't done any mods to my 22 so I only have two racks but I only fit two briskets on (1 on each rack). They were 15.5# each though. So if you have smaller ones or a third rack you can do it I'm sure.

    16#...a pork butt? It's either two or they lied and it's a pork shoulder. It is normally 1.5-2hrs per. If you're looking for pulling it at 4pm and you're doing L&S, do it over night. A big thing though...is it a pork shoulder or two butts?
