    Good luck Jason. I like the method but I like bark and after foiling the bark is gone. I didn't attempt to put it back on the smoker to try to get the bark back though as it says you can. Feared over cooking it then.

    I third dropping the temp to 225*. You want that butt to get to 195* so even though your only 9* away, drop the smoker temp and it will take a few hours to get there. And if you go over 195* to say 200*, it's ok!

    Gil if you are using water then you shouldn't have to move them because the top will be hotter than the bottom. However, if you are not using water you will need to rotate as the bottom will be much hotter. If that is the case, put the biggest one on the bottom.

    No damage. You're shooting for 195 so no harm done. You will stall at some point so don't worry about the meat temp still climbing.

    never added rub to the pork after pulling but I'd go light if I did. You don't want to disrupt the flavor of the smoke and pork. If you add to much all you'll taste is fresh rub.

I have seen some recommend hitting the cooler with hot water to get it warm, then add a couple 2 liter bottles of warm water at the bottom and put the butts in there double wrapped in heavy duty foil and a towel.     I second what Glenn said. Lots of times (like pork butt also) it will get to around 170* fast and then stall somewhere. Get that grate temp down to 225* max and you should be ok.
