I have had good results with a cast iron smoke box. Not as good as the Weber Smoker but it works in a pinch when you are in a rush. Ray

I do not cut off the ends - and I use small pieces of pecan a lot. IMO pecan goes great with poultry. Ray

I make pistachio crusted grouper and usually serve it with a really good chutney on top - kicks it up a bit. Ray
