    I also have a 733 and the auber and notice the same thing, though I need to adjust the auber's input offset. How close are the probes inside the WSM?

    Since you're not cooking on the second stone, any cheapo stone from Target, Walmart, Home Depot will do. You can also use firebricks, usually available from landscape supply stores for cheap. In fact, there's one in Hayward that sells bricks for about $1.70 each...

    Before gaskets, it would reach 275 in about 30 minutes. With gaskets, it took about an hour to reach 255. I guess I'm a little impatient :)

    Rotisserie + brining advice

    I bought the Weber 2290 Rotisserie kit earlier this year, and it no longer comes with the counter weight. How important is it for a turkey in the 15-20 lb range?
