    beginner smoker

I agree with much of what has already been said. The Webber is very efficient in using wood for smoke. I only use one chunk of wood, usually apple or hickory, no larger than 2"x3".

    WSM or Electric?

It depends. If you want to put your meat in a smoker, walk away, and leave it for hours to do something else and come back when it's done, an electric is for you. If you enjoy the cooking process, get the WSM. If space is an issue, an electric doesn't require you to have bags of charcoal...

    Best charcoal to use !

Just another vote for RO Chef's Select. It seems to burn somewhere between RO Lump and KBB. If I order it on Monday or Tuesday at doitbest.com I can pick it up at my hardware store on Friday.

    Brisket in an 18??

+1. I always fill it up and reuse the leftover charcoal. That way you don't have to try to figure out how much to use.

The 2x4 is cut to fit into the 2x4 hangers at the top front of each side for extra stability. The hangers are attached to each side and the 2x4 slides in and out of the hangers as needed. http://www.pbase.com/scottbergerphoto/image/158467075 http://www.pbase.com/scottbergerphoto/image/158467076

Looking for WSM 22.5 in Houston

I went with the 18.5 after reading on Amazing Ribs that it was hard to get the 22.5 to stay below 275 degrees. Any truth to that?

Newer WSM, Top grate not sitting on all 4 contact points

I had a similar issue when I first got my WSM. Then I noticed that the top and bottom grill grates are two different sizes. They have two different part numbers. Is it possible you tried to use the lower grate (smaller) on top?

    Smoker Shed Project

Thanks for your comments. About a month ago my wife told me the backyard was starting to look like "Sanford and Sons" with all my smoker stuff around. I looked at the work people had done on tvwb for some ideas. I opted for modifying a Suncast shed as I have used them in the past to make a...

    Smoker Shed Project

Hi. I've been reading the forum for about a year but this is my first post. I spent the last two weekends building a shed for my WSM using a Suncast GS 3000 storage shed which I made a number of modifications to. I used 3/4 " plywood, a 3x3 ft. aluminum sheet, an oil drip pan from Autozone, 1/4...
