    2nd cook, it's gonna be a brisket--HELP!

    Even with my limited experience with cooking large things, yes. 15+ hours is accurate. To be safe, you should probably start at midnight, (or even sooner) as the method suggests. The brisket will hold its temp well if you finish early, wrap it up in foil and store in a small ice chest.

    Geoff, I agree 100% about the saltiness in the BRITU rub. I used just about all of the 1/4 recipe on 4 slabs of baby backs and although they turned out excellent, I was able to taste a little more salt than I would have liked. If the ratio of salt to spice was cut a tad, I think it would be...

    First smoke was a winner

    Co to the "Cooking" section of this site and try the BRITU (Best Ribs In The Universe) recipe. It calls for exactly what you describe, both a rub and a sauce to finish them. I did 4 racks yesterday and all guests agreed they were the best ribs they had ever eaten.

    Thermometer Boiling Test

    Thanks, Sam. I took back the offending thermometer and got a new one. That one was "Johnny-on-the-spot" at right around 210-215. I installed the new one and cooked up 2 slabs of ribs, using (almost) the BRITU recipe. Turned out awesome!

    Thermometer Boiling Test

    I just tested the thermometer I rescently purchased. On the bioling water test, it registered no less than 270 degrees! I was careful nt to touch the pan with the probe. Is this one a dud, and should I get a new one? OR should I just subtract 55 degrees from the reading to get an accurate temp?
