    I'm doing 3 racks of baby backs currently. Going to my parents tomorrow for Dinner. We'll have turkey, ham and all the fixin's. Almost all holiday's in our family are like Thanksgiving.

    Should you tie boneless butts

    I've tied mine in the past. I like to think it helps it cook more evenly, especially when doing multiple. Might give Peter's cheesecloth idea a try next time.

    season your smoker

    I just fired mine up and cooked. Some have had problems controlling temps at first (running hot), but I have not found it that bad. Once I was done cooking, instead of closing down the vents I would let the WSM keep going to build up a little extra gunk.

    First cook in the rain

    Looks like I'll be doing my first cook with rain in the forecast tonight. From what I have read, it shouldn't effect the WSM too much, just don't think I'll be able to use the maverick. Oh well, the cook must go on, putting on 4 butts in an hour or two.

    Well I just finished prepping and rubbing the butts, did a bit less salt than normal, should only be about 24 hour window until they go on. Will try to take some pictures and post with results Saturday night or Sunday.
