Bacon-Wrapped Turkey Breast & Musings on Piedmont Pan

We had no extended family with us for Thanksgiving, so thought we'd experiment and true the Bacon-Wrapped Turkey Breast from Weber's Way to Grill. I know that everyone who posts here has great success. Not so for me. This didn't go so well. With the recipe calling for indirect heat, I set up...

I looked up this TW262B everyone is talking about to discover that I already own one. Only it's branded as a Pyrex.

First smoke - beer can chicken - not great results

Food scientist Shirley Corriher, in her book Cookwise says that white meat should be cooked to 150F and dark meat, to 160F. 170F for white meat is going to be way overdone. In addition to the advice about choice of, and amount of, wood, be sure you're cooking with the top vent all of the way...

    Durability at Coastal areas?

I had my 22" One Touch Gold about a mile inland on the east coast of Florida for five years before moving here to NM. At worst, there's a minor bit of surface corrosion on the struts to the legs, and those are readily available as replacement parts from Weber. The bowl and lid are perfect. I...

    Observations on a Smoke Ring

Given the explanation from the IA extension service, I don't know why adding charcoal to an electric smoker would create a smoke ring when wood alone won't do it, as charcoal should have less nitrogen in it than the wood. Charcoal should mostly be carbon.

Ordered a new 22.5 WSM and got a really good deal :)

I can't answer as a competitor, but can answer as a judge who has been to competition and seen what people are using. From what I've seen, you'd think the 18" model never existed.

UDS to Traeger to WSM??? Convince me(like i need it)

I first tried smoking on my 22" One Touch Silver by putting a water pan on the charcoal grate next to the charcoal. I concluded that the water pan did little for temperature control when it wasn't above the heat source as it in a Weber Smokey Mountain. Also, the meat on the cooking grate was...

    Jameco now carries Arduino

I just got an e-newsletter from Jameco saying that they are now carrying the Arduino experimenter builds. So if you want to build your own pit controller and need a reputable source, check it out.

    Venting: Top or bottom first?

I've been trying to BBQ on my One Touch Silver 22" grill, which does not have the fine temperature control as an actual smoker. When trying to get the temps down in a hurry, I'd been shutting down the top vent as well as the one-touch "dampers." For my first couple of cooks, the meat would...

    Kingsford Competition

I saw it marked on clearance in Lowe's last evening. Something like $6.97 for an 11.1 lb bag. So only 2.5 times what regular Kingsford goes for when it's on sale. BTW, Lowe's had a two pack of regular Kingsford at a sale price that wasn't quite as good as the Father's Day and Independence...

    2010 changes 0n 22.5 WSM

Well, that answers my question of which one to get. If your wife can fit you in the 18" model, then it should have plenty of capacity for anything I would want to do with it. The charcoal is held from the sides of the cooker by the charcoal ring, leaving a space between the cooker wall and...

    Brunswick Stew

I was wondering the other day if I could find a good stew recipe. I really miss the BBQ joints in Alabama and their stew. I may have to try it. Hey, you're only in Chandler. I'll come over and try some of yours!

Dies when 4th burner is lit

I can't believe you don't have a place to refill propane - U-Haul, welder's supply store, RV park. We don't have much of anything here in Las Cruces, but I can't swing a dead cat without hitting some place that can refill propane. (Of course, I've also had a theory that the more rural the...

    Weber Family Portraits

Well, I am embarrassed at my modest collection. The 22" One Touch Silver is in the background. I didn't think to take their picture together when they were both here. Smokey Joe is now in his permanent home in the travel trailer which is off in the storage lot. Just realized I had a...

    BBQ Pitmasters

Well, I just deleted the show so I can't go look back, but I believe Melissa was cooking mainly with several Backwoods Smokers. The Bare Bones team was using all Webers, a combination of grills and cookers. And I recall one of the other teams saying they had a Weber grill.
