    Brisket seems to be the stickler!? I rewatched Aaron Franklin's brisket show last night and wanted to recommend it in this thread, it's a very good watch and a lot of information in just a short half hour. +1 on the meatloaf! I'm cooking one today or tomorrow, trying out a new Chipotle glaze on it.

    I use grease, extra bacon drippings and what have you to make suet. I mix it with some bird seed and put it in and onion net and the birds will sing you a song to say thanks.

    I use kao-wool blanket insulation. Its from the heating industry and I get long steady cooks on very small amounts of charcoal all year long. I'm in the same state as you, but on the coast with the winds.
