    A very well known bbq master mentioned that you should always place your smoke wood in the coals, not on top. I have not been able to find an explanation why? Does anyone know why this may be or have personal experience with doing this? I always just place my chunks on top.

    I have never used the lid thermometers. When I first got a wsm 10 plus years ago I used an oven thermometer on the grate and with my current wsm I use a cyberq cloud. While the cloud is certainly more convenient the results are the same with either one.

    I had planned on cooking salmon first since I usually cook my brisket at 275 and salmon at 250 but being that I’m cooking the salmon to a temp of 150 vs a period of time it probably makes more sense to do salmon last.
